Everyone in New York has been obsessed with matcha recently! It seems like a new matcha hotspot is popping up every other weekend. While that works out really well for my cravings, it hasn’t really worked out too well for my wallet ($7 matcha lattes anyone?!), so I was ecstatic when I finally got my hands on a pack of matcha powder! Not only can I make my own matcha lattes now, I can also make some homemade matcha flavored goodies!
The first thing I made with my powder (I use the organic culinary grade matcha from Midori Spring) is matcha chia seed pudding. It was unbelievably easy and delicious… the best part about this pudding is that you can make it overnight so minimal prep is required in the morning J I’ve made chia seed pudding before and I must say it can be kind of boring on its own. The addition of matcha took it to a whole other level!
Matcha Chia Seed Pudding
1 cup unsweetened almond milk (I use the Trader Joe’s vanilla one)
1 tbsp maple syrup, or more to taste
¼ cup chia seed
Combine all ingredients in a mason jar and cha cha that matcha (shake it all up) with the lid closed. Leave overnight in your fridge. Yup, it’s that easy.
The pudding is delicious by itself but I added it on top of a layer of greek yogurt, and piled on some ground flax seeds, cashews, berries, and mint on top. I think it would also be really good with coconut and chocolate… I’ll try that in my next recipe and let you know how it goes!
